This place was quite mind blowing to see the turn over of fish that occurs on a daily basis and the freshness of stock on offer. A bleary eyed wombat was up at 4am to see the tuna auction.
picking a winner
scoring and evaluating
auctioning
carting off the fish to be carved up

There were two rooms. One with fresh and one with frozen. See my other post on death of a tuna for some pics of the fresh stuff. The fish in this room are frozen down to minus 60 degrees celcius as soon as they are gutted, and are considered by many Japanese "in the know" to be superior to fresh stuff?

It is scary to see how much fish we go through. I did not even know they went for frozen stuff Steve.
Nice photo essay shots.

Great story pictorial here, the Japanese eat fish breakfast, lunch and dinner. I would too if I could afford it!
